Eggplant Parmesan

Frank's Physical Therapist gave him an eggplant this morning, so I got together some ingredients for a casserole.

Fried the eggplant slices.

Assembled sauce, eggplant, homemade ricotta cheese and parmesan cheese.

Served with steak and rice, and cabbage, green beans and squash medley.

Yum Eggplant parmesan - of course I can make a vegan version - I can even to vegan ricotta - I use it more often for lasagna though...

The ricotta was not in the recipe so I sneaked it in, kinda like lasagna. MOM
